About Sheila
On Show and Tell day, five year old me brought a Cool Whip tub filled to the brim with wedges of raw Purple Top turnips. I was excited and determined to show my classmates how to eat and enjoy these white, crunchy, root vegetables that my mom had thoughtfully prepared. I demonstrated how to toothpick a turnip wedge, sprinkle it with salt, and then nibble it like a popsicle. Not all were convinced but I was! In fact, my entire adult life I’ve worked and shared food with others in classrooms, restaurants, home patios, and now by providing nutrition support.
My experience
I’ve spent over 25 years in the food industry, most of it as a professional cook. Straight out of college I worked for Whole Foods Market managing the in-store cafe, working retail, baking and making sandwiches. I attended the French Culinary Institute in New York City (now called the Institute of Culinary Education,) managed the Carrboro Farmers’ Market, worked front and back of house in numerous independently owned restaurants 411 West, Acme, Crook’s Corner, Lantern, project managed at a small non-profit initiative that supports the local meat supply chain, and currently own Neal’s Deli in Carrboro. Most recently I became a Nutritious Life Master Certified Nutrition and Wellness Coach.
I’m especially knowledgeable about local foods, cooking from scratch and with the seasons.
My knowledge of food is deep. I know how to plan meals and menus, create recipes, source ingredients, organize a kitchen, prep, cook, and eat it! My By-Line
Born and raised in North Carolina, Sheila Dalton is a University of North Carolina Chapel Hill grad and mom to Hank (18) and Anne (14) whom she is raising to think outside the box (she does not recommend this practice for the faint-hearted.) Dalton loves playing outdoors, is an avid trail runner, a YA fiction fan, and geeks out over nutrition research. She lives in Carrboro with her kids, tabby Toby, and a loving community of friends.
